Measure the Mix
Take the required quantity of Instant Thattai Mix.
Add Liquid
Gradually sprinkle water (or milk/warm water) — about 2–3 tablespoons per 100 g mix (adjust as needed) — to form a soft but non-sticky dough.
Optional Add-ins
You may mix in:
Finely chopped curry leaves
Sesame seeds
Roasted chana dal powder or peanuts for extra crunch
Shape the Thattai
Divide dough into small balls (like gooseberry size).
Flatten each ball into a disc (2–3 mm thickness) using a greased plastic sheet or between two sheets of parchment/zip-lock.
Prick with a fork or toothpick to prevent puffing.
Fry
Heat oil on medium flame.
Slide in 2–3 discs at a time.
Fry gently, flip once, until both sides turn golden brown and all bubbles subside.
Drain & Cool
Place on paper towels to absorb excess oil.
Once fully cooled, store in an airtight container to maintain crispness.
